Oven Baked Chicken
I love recipes like this that come from trusted friends and family. A year ago or so, I was asked to help bake some of this chicken for a fundraiser to help restore an old two-room schoolhouse that is near my home. The school house is so fun to see and contemplate all the children who learned together in that one room with one teacher for all ages. The paint is peeling and the floor is a bit warped but it has such good history! There is a group of neighbors that play pinochle twice a month through the winter months at the school house and that particular pinochle club has been playing at the schoolhouse for well over 100 years! I digress... so, my friend Karma brought me some chicken, some seasoning she had mixed up and the baking directions. I was surprised at how easy it was and the seasoning blend is now my favorite. Karma has a large family and they love this chicken. I trust her recipes! I also love the seasoning blend enough that I mix extra and keep it on hand for other pork and chicken dishes. Karma's Oven Baked Chicken
First of all, turn your oven to 400 degrees. Next, mix up the following seasonings in a small prep bowl.
2 teaspoons paprika
1 1/2 teaspoons salt
1 teaspoon onion powder
1 teaspoon garlic powder
1 teaspoon dried rosemary
1 teaspoon parsley flakes
1/2 teaspoon ground mustard
Set this aside while you prep the chicken.
6-8 pieces of bone in chicken. I like to use thighs and drumsticks
1 cup flour
Rinse chicken pieces, pat dry, and then dredge in flour. (just roll the chicken in the flour until it's coated well) Place pieces in a greased baking dish. I just spritz my pan with olive oil. It will brown best if it's not a shiny pan. Sprinkle the seasoning generously over one side and place in oven uncovered. Bake 20 minutes. Turn chicken over and sprinkle seasoning on the other side. Bake another 25-30 minutes or until juices run clear and then check to be sure the temperature of the chicken reaches 175 degrees.
Joy's Notes: This finishes with a crispy coating and tender, juicy inside. It will keep in the fridge up to 5 days and freezes well. I've had the best luck keeping the crispy skin by reheating in the air fryer or oven. Enjoy!
